Cake in a Mug

Ange posted about making cake in a mug recently. You must try it.

It's amazing because it requires only a few ingredients, and even better, only a few dishes: a mug, a tablespoon and a fork. (Ange uses a mini-whisk, but I find that a fork suits me quite nicely).

Eric and I have been splitting ours, and we eat it straight out of the mug, sometimes with a glass of milk on the side. One of these days I'll get around to dumping the cake out of the mug and eating it with a scoop of vanilla ice cream.

A few variations for my cakes- I use vegetable oil. I turn my microwave to medium-high. One time I thought the cake was going to spill over, but it didn't. Even waiting five whole minutes after the cake is done is still sometimes not enough for me to be able to hold the mug without pulling my hands into my sleeves.

I would love to try this with a raspberry sauce. Maybe for my birthday...

You're the second person that's said they use vegetable oil. I'm an oil snob, but now I think I'll see if it lightens the flavour up. Mmmm...now? Now's a good time for cake, right?
